The aim of this research was to examine the influence of natural antioxidants (green tea and coriander extracts) on the quality and stability of beef, sheep and goat fat, which were obtained by a dry melting process and stored under different storage conditions, in the refrigerator (4 ºC), in the dark (20 ºC)), and in the light (20 ºC). To test the quality and stability of the mentioned fats, 0.2 % antioxidant was added. The share of free fatty acids in the base samples of beef fat was 0.67 %, goat fat 0.77 %, and sheep fat 0.71 %. The values of the peroxide number of the base samples were 0.00 mmol O2/kg for beef and sheep fat, and 0.50 mmol O2/kg for goat fat. The determined moisture content of beef fat was 0.27 %, goat fat 0.18 %, and sheep fat 0.29 %. As part of this research, the percentage of insoluble impurities was determined, the lowest value of which was recorded in beef fat (0.46 %), followed by 0.91 % in sheep fat, and the highest value in goat fat (1.86 %). The lowest oxidative changes in beef fat were recorded when the samples were stored in the refrigerator, where the added antioxidants showed the same antioxidant effect, while at the end of the test the control sample and the sample with the addition of coriander extract had the same values (1.06 %), and the biggest changes were recorded in the sample with the addition of green tea extract (1.48%) under the same storage conditions. The highest oxidative change in beef fat was recorded in the control sample stored in the light (1.88 mmol O2/kg), and the highest hydrolytic change was recorded in the control sample stored in the dark (2.54 %). In beef fat samples stored in the light, added natural antioxidants accelerated hydrolytic spoilage. The smallest changes in the peroxide number of goat fat were recorded in the samples stored in the refrigerator, where the green tea extract showed better antioxidant properties compared to the coriander extract, while the smallest changes in the content of free fatty acids were recorded in the samples stored in the dark, and the largest in the light where added antioxidants even accelerated spoilage. The hydrolytic changes of sheep tallow were the least expressed in the samples stored in the refrigerator, where the antioxidants showed their positive effect. [ABSTRACT FROM AUTHOR]
El objetivo de esta investigación fue examinar la influencia de antioxidantes naturales (extractos de té verde y cilantro) en la calidad y estabilidad de las grasas de res, oveja y cabra, obtenidas mediante un proceso de fusión en seco y almacenadas bajo diferentes condiciones de almacenamiento, en el refrigerador (4 ºC), en la oscuridad (20 ºC), y a la luz (20 ºC). Para probar la calidad y estabilidad de las grasas mencionadas, se añadió un 0,2 % de antioxidante. El porcentaje de ácidos grasos libres en las muestras base de grasa de res fue del 0,67 %, grasa de cabra 0,77 % y grasa de oveja 0,71 %. Los valores del número de peróxidos de las muestras base fueron de 0,00 mmol O2/kg para la grasa de res y oveja, y 0,50 mmol O2/kg para la grasa de cabra. El contenido de humedad determinado de la grasa de res fue del 0,27 %, grasa de cabra 0,18 % y grasa de oveja 0,29 %. Como parte de esta investigación, se determinó el porcentaje de impurezas insolubles, siendo el valor más bajo registrado en la grasa de res (0,46 %), seguido de 0,91 % en la grasa de oveja y el valor más alto en la grasa de cabra (1,86 %). Los cambios oxidativos más bajos en la grasa de res se registraron cuando las muestras se almacenaron en el refrigerador, donde los antioxidantes añadidos mostraron el mismo efecto antioxidante, mientras que al final de la prueba, la muestra de control y la muestra con la adición de extracto de cilantro tuvieron los mismos valores (1,06 %), y los cambios más grandes se registraron en la muestra con la adición de extracto de té verde (1,48 %) bajo las mismas condiciones de almacenamiento. El cambio oxidativo más alto en la grasa de res se registró en la muestra de control almacenada a la luz (1,88 mmol O2/kg), y el cambio hidrolítico más alto se registró en la muestra de control almacenada en la oscuridad (2,54 %). En las muestras de grasa de res almacenadas a la luz, los antioxidantes naturales añadidos aceleraron el deterioro hidrolítico. Los cambios más pequeños en el número de peróxidos de la grasa de cabra se registraron en las muestras almacenadas en el refrigerador, donde el extracto de té verde mostró mejores propiedades antioxidantes en comparación con el extracto de cilantro, mientras que los cambios más pequeños en el contenido de ácidos grasos libres se registraron en las muestras almacenadas en la oscuridad y los más grandes a la luz, donde los antioxidantes añadidos incluso aceleraron el deterioro. Los cambios hidrolíticos de la grasa de oveja fueron menos expresados en las muestras almacenadas en el refrigerador, donde los antioxidantes mostraron su efecto positivo. [ABSTRACT FROM AUTHOR]
Ziel dieser Untersuchung war es, den Einfluss natürlicher Antioxidantien (Grüntee- und Korianderextrakte) auf die Qualität und Stabilität von Rinder-, Schaf- und Ziegenfett zu untersuchen, das durch ein Trockenschmelzverfahren gewonnen und unter verschiedenen Lagerungsbedingungen, im Kühlschrank (4 ºC), im Dunkeln (20 ºC) und im Licht (20 ºC), gelagert wurde. Um die Qualität und Stabilität der genannten Fette zu prüfen, wurden 0,2 % Antioxidationsmittel zugesetzt. Der Anteil der freien Fettsäuren in den Ausgangsproben betrug bei Rinderfett 0,67 %, bei Ziegenfett 0,77 % und bei Schaffett 0,71 %. Die Werte der Peroxidzahl der Ausgangsproben betrugen 0,00 mmol O2/kg für Rinder- und Schaffett und 0,50 mmol O2/kg für Ziegenfett. Der ermittelte Feuchtigkeitsgehalt von Rinderfett betrug 0,27 %, von Ziegenfett 0,18 % und von Schaffett 0,29 %. Im Rahmen dieser Untersuchung wurde der prozentuale Anteil an unlöslichen Verunreinigungen bestimmt, wobei der niedrigste Wert bei Rinderfett (0,46 %), gefolgt von 0,91 % bei Schafsfett und dem höchsten Wert bei Ziegenfett (1,86 %) festgestellt wurde. Die geringsten oxidativen Veränderungen im Rinderfett wurden bei der Lagerung der Proben im Kühlschrank festgestellt, wo die zugesetzten Antioxidantien die gleiche antioxidative Wirkung zeigten, während am Ende des Tests die Kontrollprobe und die Probe mit dem Zusatz von Korianderextrakt die gleichen Werte (1,06 %) aufwiesen und die größten Veränderungen bei der Probe mit dem Zusatz von Grüntee-Extrakt (1,48 %) unter den gleichen Lagerungsbedingungen festgestellt wurden. Die höchste oxidative Veränderung des Rinderfetts wurde bei der im Licht gelagerten Kontrollprobe (1,88 mmol O2/kg) und die höchste hydrolytische Veränderung bei der im Dunkeln gelagerten Kontrollprobe (2,54 %) festgestellt. Bei den im Licht gelagerten Rinderfettproben beschleunigten die zugesetzten natürlichen Antioxidantien den hydrolytischen Verderb. Die geringsten Veränderungen der Peroxidzahl von Ziegenfett wurden bei den im Kühlschrank gelagerten Proben festgestellt, wo der Grüntee-Extrakt im Vergleich zum Koriander-Extrakt bessere antioxidative Eigenschaften aufwies, während die geringsten Veränderungen des Gehalts an freien Fettsäuren bei den im Dunkeln gelagerten Proben und die größten bei den im Licht gelagerten Proben festgestellt wurden, wo zugesetzte Antioxidantien den Verderb noch beschleunigten. Die hydrolytischen Veränderungen des Schafstalgs waren bei den im Kühlschrank gelagerten Proben am geringsten, wo die Antioxidantien ihre positive Wirkung zeigten. [ABSTRACT FROM AUTHOR]
Cilj ovog istraživanja bio je ispitati utjecaj prirodnih antioksidanasa (ekstrakta zelenog čaja i korijandera) na kvalitetu i stabilnost juneće, ovčje i kozje masti, koje su dobivene suhim postupkom topljenja i čuvane pri različitim uvjetima skladištenja, u hladnjaku (4 ºC), u tami (20 ºC), te na svjetlu (20 ºC). Za ispitivanje kvalitete i stabilnosti navedenih masti dodano je 0,2 % antioksidansa. Udio slobodnih masnih kiselina u baznim uzorcima juneće masti iznosio je 0,67 %, kozje masti 0,77 %, a ovčje masti 0,71 %. Vrijednosti peroksidnog broja baznih uzoraka bile su 0,00 mmol O2/kg za juneću i ovčju mast, a za kozju 0,50 mmol O2/kg. Utvrđena vlažnost juneće masti iznosila je 0,27 %, kozje masti 0,18 %, a ovčje 0,29 %. U sklopu ovog istraživanja određen je postotak netopljivih nečistoća, čija je najmanja vrijednost zabilježena u junećoj masti (0,46 %), zatim 0,91 % u ovčjoj masti, a najveća vrijednost u kozjoj masti (1,86 %). Najmanje oksidativne promjene u junećoj masti zabilježene su prilikom čuvanja uzoraka u hladnjaku, gdje su dodani antioksidansi pokazali isto antioksidativno djelovanje, dok su na kraju ispitivanja kontrolni uzorak i uzorak s dodatkom korijandera imali iste vrijednosti (1,06 %), te su najveće promjene zabilježene u uzorku s dodatkom ekstrakta zelenog čaja (1,48 %) pri istim uvjetima čuvanja. Najveća oksidativna promjena juneće masti zabilježena je u kontrolnom uzorku čuvanom na svjetlu (1,88 mmol O2/kg), a najveća hidrolitička promjena zabilježena je kod kontrolnog uzorka čuvanog na tamnom mjestu (2,54 %). U uzorcima juneće masti čuvane na svjetlu, dodani prirodni antioksidansi ubrzali su hidrolitičko kvarenje. Najmanje promjene u peroksidnom broju kozje masti zabilježene su u uzorcima čuvanima u hladnjaku, gdje je ekstrakt zelenog čaja pokazao bolja antioksidativna svojstva u odnosu na ekstrakt korijandera, dok su najmanje promjene u sadržaju slobodnih masnih kiselina zabilježene u uzorcima čuvanim u tami, a najveći na svjetlu gdje su dodani antioksidansi čak ubrzavali kvarenje. Hidrolitičke promjene ovčjeg loja najmanje su izražene u uzorcima čuvanim u hladnjaku, gdje su antioksidansi iskazali svoje pozitivno djelovanje. [ABSTRACT FROM AUTHOR]
Questa ricerca si era riproposta di esaminare l'impatto degli antiossidanti naturali (estratto di tè verde e coriandolo) sulla qualità e la stabilità del grasso bovino, ovino e caprino, ottenuti mediante il processo di fusione a secco e conservati in diverse condizioni di stoccaggio, in frigorifero (4 ºC), al buio (20 ºC) e alla luce (20 ºC). Per testare la qualità e la stabilità dei grassi citati è stato aggiunto lo 0,2% di antiossidanti. Nei tre campioni base considerati sono state rilevate le seguenti percentuali di acidi grassi liberi: grasso bovino 0,67%, grasso caprino 0,77% e grasso ovino 0,71%. Circa l'indice di perossido dei campioni base, la ricerca ha evidenziato i seguenti valori: 0,00 mmol O2/kg per il grasso bovino e ovino e lo 0,50 mmol O2/kg per il grasso caprino. Per quanto riguarda, invece, il contenuto di umidità, nel grasso bovino è stata registrata una percentuale dello 0,27%, nel grasso caprino dello 0,18% e nel grasso ovino dello 0,29%. Nell'ambito di questa ricerca è stata anche determinata la percentuale di impurità insolubili, il cui valore più basso è stato registrato nel grasso bovino (0,46%), seguito da quello ovino con lo 0,91% e dal grasso caprino, con il valore più alto (1,86%). Per quanto riguarda le modifiche ossidative, il minore impatto è stato registrato riguardo ai campioni di grasso bovino conservati in frigorifero, dove gli antiossidanti aggiunti hanno mostrato il medesimo effetto antiossidante, mentre alla fine del test il campione di controllo e il campione con l'aggiunta di coriandolo hanno fatto registrare gli stessi valori (1,06%). L'impatto maggiore in termini di mutamenti ossidativi è stato registrato nel campione a cui è stato aggiunto l'estratto di tè verde (1,48%) alle medesime condizioni di conservazione. La modificazione ossidativa più elevata nel grasso bovino è stata registrata nel campione di controllo conservato alla luce (1,88 mmol O2/kg), mentre la modificazione idrolitica più elevata è stata registrata nel campione di controllo conservato al buio (2,54%). Nei campioni di grasso bovino conservati alla luce, gli antiossidanti naturali aggiunti hanno accelerato il deterioramento idrolitico. Riguardo al numero di perossidi nel grasso caprino, minori modificazioni sono state osservate nei campioni conservati in frigorifero, dove l'estratto di tè verde ha mostrato migliori proprietà antiossidanti rispetto all'estratto di coriandolo, mentre, per quanto riguarda la percentuale di acidi grassi liberi, minori sono state le modificazioni registrate nei campioni conservati al buio e maggiori quelle registrate nei campioni conservati alla luce, dove gli antiossidanti aggiunti hanno addirittura accelerato il deterioramento. Le modificazioni idrolitiche del grasso ovino sono risultate meno significative nei campioni conservati in frigorifero, dove gli antiossidanti hanno mostrato la loro efficacia. [ABSTRACT FROM AUTHOR]
